Enchilada Bowls

Over the weekend we had 2 Wrestling Tournaments
we had to attend
We went out to eat on Saturday
but Sunday I knew I needed my lovely Crockpot
I wanted Chicken and Mexican
{what to make,what to make}
Chicken Enchiladas
but it was 9am and I had to leave in a half hour
So I went down to the Pantry and found

So I put the
2 Frozen Chicken Breasts in the Crockpot
lined w/those AMAZING Reynold's Crockpot Liners
Topped it with the Corn {NOT Drained},
Rotel Tomatoes{NOT Drained}
Then I added the Can of Black Beans{Drained and Rinsed}

 Put in on HIGH for about 6hrs

then  Shred the Chicken with 2 forks
add 8oz. Cream Cheese and a packet of Taco Seasoning
Stir and put on LOW for 20 mins

Almost Done
Put some tortilla chips in a Bowl top with Enchilada Mixture
and your Favorite toppings
we added cheese,sour cream,chives,and little tortilla strips
and serve it with Cheese Roll ups

And as a added bonus
if you have any leftovers
you can heat up the next day and eat as a dip...

Chicken Tortellini Soup


So it's been getting colder out it's about time!!!
I love winter and watching the kids sled "our way"
{My Husband is pulling them with his Quad that's why they are wearing helmets!!}
So that's when I like to make soup

Chicken Tortellini Soup

I am cooking
and using ONLY what's in my stockpile
And I had everything...
Frozen Tortellini
1lb. cooked chicken
1 can Tomatoes w/basil and oregano
2 cans chicken broth
1/4 pack of frozen spinach
1 can tomato paste{not pictured sorry}
1/2 onion chopped
1c.water
salt and pepper to taste
I put in all in a pot and heat on Low
for about an hour
top w/parm cheese
and serve w/ warm bread

Italian Stuffed Shells

This is my go to recipe for any special occasion
I found this recipe from one of the ladies that I just love...
Mrs. Paula Deen
I adapted my recipe from hers..
{This recipe will feed my family of 4}

Italian Stuffed Shells

1/2 box of shells
1 lb. ground beef
1/2 onion chopped
salt, pepper and garlic powder to taste
1/2 box of frozen spinach
8oz cream cheese,softened
1 jar spagetti sauce
4oz. shredded mozz cheese

Cook pasta
Cook meat w/onion
add salt, pepper and garlic powder
Thaw out spinach and squeeze out excess water
Add cream cheese to the spinach
Mix meat mixture with cream cheese mixture
Stuff the shells with the mixture
Spray a 9x13 pan with cooking spray
place shells in the pan cover w/spagetti sauce
and top with mozz cheese
Bake @350 for an hour
Enjoy....
